Alentejo's White Wine Monte do Desespero 6 bottles wine box, coming from 31.3 hectares of vineyards of Herdade do Monte das Serras in Reguendos de Monsaraz, planted on a schistic, slave and hard land. Once a dry crop, the region now has a dry clime with low precipitation. At the peak of summer, the influence of hot winds brings small swirls through the vineyard, reminiscing a warm, almost African, environment.
Winemaking: Handmade grape harvest to 15kg boxes in the first hours of the day. The chosen grapes are smashed and pressed in a short period at low pressure. The tear must is submitted to a decanting process for 72 hours. The alcoholic fermentation takes place for 3 weeks at 10ºC in small inox tanks. Partially aged for 6 months in wood with bâtonnage. After bottling the wine stages for 6 months on the bottle.
